Everyone's favorite chanterelle mushrooms are perfectly combined with potatoes, resulting in a very tasty aromatic dish. There are many recipes for potatoes, stewed or fried with mushrooms. In addition, you can significantly simplify the cooking process using a slow cooker.
Selection and preparation of ingredients
First of all, you should be responsive to the choice of mushrooms: ideally, it is better to collect them yourself in the forest. If this is not possible, the freshest product should be purchased: the slice should be without the slightest sign of lethargy, uniform light color.
On the body of the fungus there should not be excess mucus, only a slightly damp hat. All other components of the dish are easier to choose, as they are quite traditional (potatoes, onions, sour cream, meat).
Important! It is not necessary without special need to thoroughly wash the chanterelles, as they are very hygroscopic (absorb moisture abundantly, as a result of which they become watery). Fresh mushrooms of good quality, just rinse them after removing the garbage.
Recipes for cooking potatoes with chanterelles in a slow cooker
The following are descriptions of a few simple cooking recipes. The main feature of these methods is that they are all designed for multicooking, but can easily be adapted to cooking on a gas or electric oven.

- Go through, remove all excess garbage from the mushrooms. Wash slightly if necessary.
- When you have some doubts about the quality of the chanterelles or if you are going to feed the children with a dish, you can cook the chanterelles for a quarter of an hour on the stove or at the same time in the multicooker (“Steaming” or “Soup” mode).
- Large chanterelles cut into slices of approximately equal size.
- Peel and chop the onion head. Set the mode "Frying", pour oil into the bowl of the multicooker, let it heat. Place the onion in the container when it begins to lighten, add the chanterelles, mix.
- Install the program “Baking”, stirring occasionally, cook for about 20 minutes.
- Wash, peel and cut potatoes.
- After the mushrooms and onions are ready, the device will turn off, add potatoes to the bowl, mix, turn on the “Fry” or “Baking” mode for 40 minutes.
- Stir the contents of the apparatus periodically, salt in 10-15 minutes, add spices. At this stage, you should not mix the contents too intensely, otherwise the potatoes will turn out lumps that will not add to the dish aesthetics.
- After completion of the program, cover the contents and leave for 15 minutes. in the "Heating" mode.
- After the indicated time, check the roast for taste, add salt and pepper if necessary. You can sprinkle the cooked dish with herbs. Use the one you like best. Dill and parsley are traditionally suitable, but celery or cilantro, if you like, will not hurt.

- Enumerate mushrooms, remove debris, rinse slightly. If the chanterelles cause some doubts, soak them in water with salt for 1/2 hour, changing the water periodically. Then boil for 15 minutes. (“Steaming” or “Soup” program). If the chanterelles are small, they must be cut in half lengthwise, large - in quarters.
- Peel and chop the onion. Pour oil into the device's capacity, it is better to use refined: it does not foam so much, is more suitable for frying and does not give an extraneous taste. If you think that there is little oil, you should not add it in addition - the mushrooms will give a lot of liquid.
- Place the onion in the heated oil, fry until it begins to lighten. A stronger degree of frying the onion is not required, otherwise it will burn by the time the chanterelles are ready. Then add carrots, 5 minutes later - mushrooms. The frying procedure is carried out using the program "Frying" or "Baking". Estimated time - 15-20 minutes.
- While the onions with carrots and mushrooms are fried, you can tackle the potatoes: they wash it, peel it, wash it with running water, let it dry slightly (you can use paper towels), and then cut it. You can grind the tubers in the way you like best: slices, quarters, cubes.
- Pour the chopped potatoes into the container, add about 100 ml of water there, put on the “Stew” mode and set the time to 20 minutes. At the end of this mode, the device will be set to "Heating". At this time, you should open the lid, salt and add spices, mix the contents. Close the slow cooker, install the “Baking” program, duration - 20 minutes.
- In 5 minutes before the end of the procedure, add the remaining ingredients to the fry, mix again and bring the procedure to completion.

- Sort out the mushrooms, remove grass and branches, if necessary - rinse, gently squeeze out excess moisture. If the chanterelles are small, they are used whole, large cut lengthwise into 2 or 4 parts.
- Wash and peel onions and carrots. Chop the onion, and rub the carrots or cut into a shallow strip.
- Turn on the multicooker in the “Frying” mode for 20-30 minutes, pour vegetable oil into the container and, when it warms up, place the onion, fry for 5 minutes, stirring occasionally.
- After the specified time add carrots, fry for another 3-5 minutes. Then pour mushrooms into the bowl, fry until excess water leaves the mushrooms. Stir the contents of the device periodically, if necessary - extend the frying mode for the required time.
- While the process of frying onions, carrots and mushrooms lasts, wash and peel the potatoes. Cut it into cubes. It is better to cut into fairly large pieces, with an edge of 2-2.5 cm.
- When the mushrooms are sufficiently cooked, you can add potatoes. Pour it into the bowl, add salt, spices, sour cream. Close the container with a lid, set the “Extinguishing” program, the procedure takes 20 minutes.
- After the timer goes off, try the contents to taste. If the roast is not cooked, simmer another 10-15 minutes. In the event that the dish is ready, close the lid and leave to brew, it will finally reach.
- Pour the chopped greens into the roast, mix, let it stand under the lid for 3-5 minutes. Then you can serve homemade potato stew with sour cream to the table.
With beef in sour cream

- When buying, it is better to opt for a younger beef. In the event that it was not possible to acquire such a product, it will not be superfluous to beat off meat cut into pieces (approximately 2.5 × 2.5 cm).
- A feature of this recipe is the preliminary marinating of meat, as beef is often characterized by some rigidity. In a suitable container, mix all the ingredients of the marinade, put chopped (if necessary, beaten) beef there. Cover the container, put in the refrigerator for 1.5–2 hours.
- After the specified time, pour oil into the multicooker, install the “Frying” program, turn it on for 15 minutes. When the oil warms up (2-3 minutes), place the meat in a bowl, mix. While roasting beef until golden brown, mix it periodically.
- Peel and chop the onions along (feathers).
- Sort the mushrooms, remove the garbage and rinse, if necessary. Large chanterelles cut lengthwise into 2 or 4 parts.
- Add the onion to the roast beef, to the extent of a golden brown crust, and after 3-5 minutes - mushrooms. Fry until the mushrooms give away moisture (20–25 min.)
- For this recipe, it is important to choose potatoes of about the same average size and weight (80-100 grams of one tuber). That is, to prepare a dish in this way, you will need 8-9 pieces. This important circumstance must be taken into account.
- Wash and peel potatoes, pour over water again. Each tuber is cut crosswise along into 4 parts. For each potato you should get 4 approximately equal slices.
- Place the potatoes in the capacity of the machine, add spices, salt and mix. Pour 120 ml of water there. Set the "Extinguishing" mode, time - 50 minutes. This time is enough for the potatoes to fully cook and become moderately crumbly. 20 minutes after the start of the process add sour cream, mix gently.
- 10 minutes before cooking, add greens, gently mix the contents so that the potato wedges remain intact. To try, if the dish is ready, you can leave it for 10-15 minutes in the "Heating" mode.
Important! You should remember some rules for preparing potatoes with mushrooms: for example, if you do not add water and remove (evaporate) all the moisture from the mushrooms, the dish will be fried, not stewed. Although it will not become less tasty, just a little different.
With chicken

- For this recipe, it is better to use chicken fillet, although a carcass, chopped in portions, is quite suitable, carcasses, etc. It should only be borne in mind that the breast is less fat than other parts of the carcass and drier, therefore, water for its preparation it will take more (when using other parts of the bird, you can do without any additional moisture).
- Wash the chicken, wipe, cut into portions. Pour oil into the bowl by setting the mode "Frying", and after 3 minutes put the chicken in the container, mix. The approximate duration of frying is 10 minutes
- Peel and chop the onion. When the chicken is browned, add the onion to it. Fry an additional 5-7 minutes.
- Wash and peel potatoes, pour over water again, cut. Cut either sufficiently thick slices (1-1.5 cm) or cubes.
- When the chicken and onion reach the desired condition, add potatoes, salt and spices to the bowl, mix. Set the "Extinguishing" mode, pour 0.5 cups of water. Stew for 50 minutes.
- 10 minutes before the readiness to fill the bowl with greens, gently mix the contents. Try the roast, and if the potatoes are ready, you can leave it for 10-15 minutes in the "Preheat" mode.
Did you know? Worms are almost never found in chanterelles. This is due to the substance of hinomannosis, which beetles, worms and larvae are very afraid of, but it is useful for humans.
With turkey

- You can use both fillet and other parts of the bird. The rules are the same as in the previous recipe: from the breast you will get a diet dish, from the rest of the bird - more fat and rich roast. It is up to you to separate bones from meat immediately or not. Although, having chopped portions of the drumstick, the bones can be removed during the meal: they are large and it will not be difficult to separate them from the finished meat.
- Cut the turkey into slices (approximately 3 × 3 cm). Pour oil into the tank, install the “Frying” program. Place the poultry meat in the heated oil, mix. Fry for about 10 minutes.
- Peel and chop onions. When the surface of the pieces of meat becomes beautiful and ruddy, add the onion. Fry until onion whitens.
- Peel the potatoes, wash thoroughly under running water, cut into cubes.
- When the turkey and onions are sufficiently fried, pour potatoes into the bowl, pour 0.5 cups of water into the container. Select the "Extinguishing" program, time - 50 minutes.
- 10 minutes before cooking, add greens, gently mix the contents so that the potatoes do not fall apart. Try the roast: if it is ready, you can leave it for 10-15 minutes, the program "Heating".
In this recipe, as in the previous one, you can make an addition: 5 minutes before cooking, sprinkle the roast with grated cheese (130-150 g). And if you are not afraid for your own figure, first make a grid of mayonnaise (60–80 g) on the surface of the dish. This combination (mayonnaise and cheese) can be considered a classic, it will perfectly complement your dish.
