The independent control system of quality Roskontrol closely engaged in the study of cream sausages on the Russian market, made by forces of such enterprises as: Ostankino, Dymov, Okraina, Klinsky and Dymov.
It is known that Roskontrol employees buy goods as ordinary consumers - through retail stores. They emphasize that they do not take goods directly from manufacturers. Instead, experts purchase samples from a randomly selected batch.
“In the process of purchasing and delivering to the laboratory, we comply with all the conditions necessary to maintain the initial quality of the product,” experts from Roskontrol emphasize. They did not deviate from their rules in the case of sausages. As a result, all the studied samples of the above-mentioned brands fell into the so-called “black list” of the system. Basically, the reason for getting into this list was the fact that practically in each of the studied samples ingredients undeclared in the product were identified. For example, pork skins and carrageenan (a linear sulfate polysaccharide derived from red seaweed, also known as E-407) were found in sausages of the Klinsky brand. It is no secret that a solution of carrageenan can be used in the production of meat products in order to retain moisture and reduce the cost of production based on the weight of the finished product.Undeclared starch was found in Ostankino sausages. In the production of Velcom, particles of the oral mucosa, as well as starch, E-407, bird DNA and fiber, were found. The content of mesophilic aerobic and optional anaerobic microorganisms was also exceeded in the last sausages. Sausages of the Okraina trademark contained a high proportion of fat - 24.6%, which is a quarter more than prescribed by GOST. As for the “Dymovskaya” product, it contained vegetable carbohydrate components not declared in the composition.
