Dido Djozef farm (Ternopil region), which is engaged in the cultivation and sale of snails, has set a goal to create a snail market in Ukraine.
This was told by co-owner Dido Djozef Ivanna Beidel.
“Today everyone is trying to export snails. But we have chosen a different path - we want to create an internal market and a culture of consumption of a snail that does not exist yet, ”she noted. “There are many skeptics who tell us that this takes time, that it is unrealistic.”
Dido Djozef grows snails Helix Aspersa Muller, collaborates with the Dubensky cannery, which produces fully certified products - frozen boiled snail meat and a line of pickled snails in four sauces. In addition, snail liver is also produced.
The farm decided to tackle the sale of snails in Ukraine four months ago. Frozen snails are delivered to restaurants. Their shelf life is one year. Pickled products can be stored for two months.
“We can confidently say that in two years in Ukraine everyone will start eating snails, like sushi, mussels. When we create a cult for the consumption of snails, they will still thank us, ”Ivanna Beidel is convinced. - Yes, there are snails of the first, second, third grade. The first grade is exported, and the second and third can be easily processed. ”
According to her, the smaller the snail, the tastier it is. “But Europeans want to consume a large snail. Let them be big and tasty for us, ”she said.
